Pineapple Casserole Recipe

An easy pineapple casserole recipe makes a perfect side dish with a holiday ham.

Ingredients
  

  • 5-6 cups ½-inch cubes white bread, crusts removed is optional about 6 slices of bread
  • ¼ cup small dice sweet red bell peppers
  • ½ cup (1 stick) unsalted butter, melted
  • 4 eggs
  • ½ cup sugar
  • 2 teaspoons grated fresh ginger
  • ½ teaspoon kosher salt
  • ¾ cup pineapple juice
  • 1 ½ cups crushed pineapple

  • 1 2-quart casserole dish

Method
 

  1. Heat oven to 350F. Butter a 2-quart baking dish.
  2. In large bowl, toss bread cubes, red peppers and melted butter; set aside.
  3. In another bowl, whisk eggs, sugar, ginger and salt until blended. Stir in juice and pineapple.
  4. Using a flexible rubber spatula, fold pineapple mixture into bread mixture until bread is saturated. Pour into prepared baking dish. Pressing bread down to smooth the top.
  5. Bake 50 to 60 minutes or until puffed, golden brown and set in the center.

Notes

a 20 oz. can of crushed pineapple can substitute for above pineapple and juice
use a food processor to crush fresh pineapple pieces
