Ingredients
  

  • 2 slices 70 grams stale Italian bread, torn
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon olive oil
  • 1 garlic clove grated
  • 1 teaspoon anchovy paste or more to taste
  • ½-1 teaspoon kosher salt
  • 1 teaspoon grated fresh lemon zest
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh green herbs

Method
 

  1. Pulse torn bread in the bowl of a food processor to desired breadcrumb size.
  2. Melt butter in skillet over medium heat. Using a silicone spatula or wooden spoon, stir in the olive oil, garlic and anchovy paste. Cook mixture for 30-60 seconds or until fragrant.
  3. Add breadcrumbs, stirring well to coat. Continue stirring until golden brown and toasted, about 5 to 10 minutes. Season with salt.
  4. Transfer to a bowl to cool.
  5. Stir in lemon zest, cheese and herbs.

Notes

You can use any kind of bread to make breadcrumbs.
