Zucchini Fries Air Fryer

Ingredients
  

  • 4 small fresh zucchini trimmed and sliced lengthwise into sticks
  • 2 tablespoon kosher salt
  • ¼ cup all-purpose flour
  • 1 large egg whisked
  • ½ cup seasoned dry breadcrumbs
  • avocado oil cooking spray

Equipment

  • 1 air fryer

Method
 

  1. Heat air fryer to 400F.
  2. Toss sliced zucchini with salt and place on a rack for 30 minutes to sweat.
  3. Pat zucchini dry with paper towels.
  4. Place flour in a zippered plastic bag. Add zucchini, in batches, shaking to coat with the flour. Shake off the excess.
  5. Dip zucchini in egg letting excess drip back into bowl.
  6. Place breadcrumbs in another zippered bag. Add zucchini in batches shaking to coat with crumbs.
  7. Place zucchini in air fryer in batches. Do not crowd it. Spray lightly with avocado oil cooking spray.
  8. Cook for 8 to 10 minutes turning half way through the cooking time.
  9. Serve immediately.

Notes

Panko breadcrumbs can be used for extra crispiness.
Season plain breadcrumbs with dry seasoning of your choice. I like Italian.
Coat all sides of zucchini fries with avocado oil or other cooking spray.
