Method
- Heat air fryer to 400F.
- Toss sliced zucchini with salt and place on a rack for 30 minutes to sweat.
- Pat zucchini dry with paper towels.
- Place flour in a zippered plastic bag. Add zucchini, in batches, shaking to coat with the flour. Shake off the excess.
- Dip zucchini in egg letting excess drip back into bowl.
- Place breadcrumbs in another zippered bag. Add zucchini in batches shaking to coat with crumbs.
- Place zucchini in air fryer in batches. Do not crowd it. Spray lightly with avocado oil cooking spray.
- Cook for 8 to 10 minutes turning half way through the cooking time.
- Serve immediately.

Notes
Panko breadcrumbs can be used for extra crispiness.
Season plain breadcrumbs with dry seasoning of your choice. I like Italian.
Coat all sides of zucchini fries with avocado oil or other cooking spray.
