Ingredients
  

  • 1 tablespoon butter
  • 2 cups cubed dry artisan bread
  • ¼ cup wild blueberries
  • 1 cup milk
  • 2 eggs lightly beaten
  • 3 tablespoons sugar
  • ½ teaspoon vanilla bean paste or vanilla extract
  • ⅛ teaspoon salt
  • Vanilla icecream or yogurt for serving

Equipment

  • 1 microwave oven

Method
 

  1. Lightly butter to microwave safe mugs.
  2. Fill mugs halfway with bread. Sprinkle with half the blueberries. Repeat layers.
  3. Whisk milk, eggs, sugar, vanilla and salt until well blended.
  4. Pour milk mixture evenly over bread and berries in the mugs. Gently press bread down and let stand for 1 to 2 minutes.
  5. Microwave both mugs at the same time on HIGH for 4 minutes or until bread pudding is puffed and a wooden skewer inserted in center comes out clean.
  6. Top with ice cream, yogurt or sweetened whipped cream.
