Most small-batch desserts can be tricky to get right in the microwave, but this recipe avoids the common rubbery pitfall. By using simple pantry staples and two standard coffee mugs, you can transform a few slices of bread into a satisfying dessert or quick breakfast. It's the perfect easy mug cake alternative for when you want something a little more comforting and classic.

Pro Tips for the Best Mug Bread Pudding
- The secret to avoiding a rubbery texture is moisture and power level. First, ensure your bread is fully saturated in the custard mix before cooking. Second, avoid overcooking; the pudding will continue to set as it rests for 1-2 minutes after the microwave stops.
- For the best texture, use a sturdy enriched bread like brioche or challah. These breads have a higher egg and fat content, which helps them stay soft and custardy rather than turning soggy.
- Your bread pudding is ready when the top has puffed up and the center looks set, but still moist. The top should spring back slightly when gently pressed and a wooden pick inserted into the center comes out clean.
